Small bead of rtv silicone between gasket and mating surface will fix an uneven surface for this condition. Just make sure to let the silicone dry before adding water and putting system under pressure. As far as sticky side, I have always put it on the part to mate to the block/head. Easier to scrape the next time when the small part is on the bench instead of the block/head.
