Can someone tell me the proper way to pack the speedometer gear? I am replacing mine with a used one and want to do it right. Also, any tricks to removing the wheel?

Are you referring to packing with grease? A dab of LM grease will work fine.

If the picture in you avatar is your bike... I see it's got disc covers. They are a PITA as far as I'm concerned.
You'll have to loosen the axle and slide it out... that'll give you enough room to get the wheel out. Of course you have to remove the calipers.

When you've got the speedo drive in your hands... remove the gear with needle nose plyers. Then pack the insides with a good Lithim Based grease. Nothing heavy like bearing grease. Then reinstall the gear. Good Luck!
